Chilies are generally considered to be of the species Capsicum Frutescence, but some beliefs it to be a member of the species Capsicum Annum. Red chilies are originated in Mexico and it spread across the world. Chilies are used for both food and medicinal uses. The Major producers of the Chilies are China, Mexico, Turkey, Indonesia, India, Spain, and the USA.

The Chilis are smaller, rounder and less pungent, shriveled appearance and not so spicy, but lends a very piquant and flavorful taste to the food. The chili powder is a blend of medium quality pepper mostly used for tandoori dishes. The roasted chili has a very pleasant aroma. It can redden anything that is capable of absorbing color like oil and surface of the meat, etc.

Store it in an airtight jar in a cool and dry place, in order to retain the aroma. It will remain useful for a year in dry conditions. Avoid exposure to air and moisture. If color fades, it means the lot is getting old, so use up soon or discard.

This chili pepper is either used fresh, dried, wrinkled or grounded. It is used to give flavor and color to curries, vegetables, sauces, soups, and stews. It is also popular in marinades alongside chopped onions and tomatoes. Fried or dried chili is used to make hot sauce, a bottled condiment.
