Cloves are the aromatic flower buds of a tree in the family Myrtaceae, Syzygium aromaticum. They are native to eastern Indonesian. The Major producers of Cloves are India, Bangladesh, Indonesia, Madagascar, Zanzibar, Pakistan, Sri Lanka, and Tanzania.

The cloves are the unopened flower bud of the evergreen clove tree. The flower buds initially have a pale color, gradually turn green, and then transition to bright red color. After that, the buds are harvested when they are bright red and dried until they turn brown in color. The buds are 1.5-2 cm long, and consist of a long calyx that terminates in four spreading sepals, and four unopened petals forms a small central ball. Cloves have a very hard exterior and their flesh contains an oily compound that is the reason of sweet and aromatic flavor.

Clove can be stored in an airtight container away from moisture, heat, and sunlight. Then, they will remain their flavor for about one year.

The Clove has a warm, sweet, and pungent flavor and used in several cuisines including Asian, African, and the Middle East Countries. They are used to add flavor to meat, curries, soups, stew, and Marinades, as well as fruit such as apples, oranges, plums, and pears.
