Ginger is derived from a flowering plant of the family Zingiberaceae. Ginger originated in the tropical rainforest in southern Asia. The Major producers of  Ginger are India, China, Nepal, Indonesia, and Thailand.

Ginger is the underground rhizome of the ginger plant. They have an unmistakable shape like bulbous little joints, from which grow small, knobby bumps. The flesh of the ginger rhizome can be yellow, white, or red in color, depending upon the variety. The flesh is covered with brownish skin that may be either be thick or thin. The ginger has a firm, yet striated texture and a taste that is aromatic, pungent, and hot.

Fresh Ginger can be stored for around 2 weeks in plastic bags in the refrigerator. Dried Ginger can be stored in an airtight container placed in cool, dark, dry area for up to One year. The Ground Variety should keep for around 6 months if stored in airtight container.

Ginger is used in almost all South Asian Cuisines. It can be used as a spice, fresh or dried and ground to a powder. The fresh, juicy root has sweetly pungent taste and a perfume like a scent that makes it suitable for sweet or savory dishes. Due to this, it is made using as Ginger candy, which is a type of confectionery made by cooking the root in sugar. It is used as a spice for cooking in all curry, lentils, stew, meat, and poultry dishes. It is also used in some of the form of beer and wine for adding spiciness.
