Mace is the spices made from the reddish aril of the nutmeg seed of the Myristica Genus. Myristica Fragrans is a dark leaved, evergreen tree, mainly cultivated for two spices derived from its fruit. It is commonly grown in the Caribbean, other tropical areas of the world, and in Southern India. The Major producers of Long Pepper are Indonesia, Grenada, India, Malaysia, Papua New Guinea, Sri Lanka, and Caribbean Islands.
Description:
Mace is the spice made from the reddish seed covering of the Nutmeg seed. The Nutmeg Seed are dried over a period of several weeks. During this process, the nutmeg shrinks away from its hard seed coat until the kernels rattle in their shell when shaken. After that, the shell is then broken and the crimson colored Aril is removed from the nutmeg seed. Further, the Aril is dried under the shade for 10 to 14 days. Its color changes to pale yellow, orange, or tan. Mace contains 7 to 14 percent essential oil, the principal components of which are Pinene, Camphene, and Dipentene.
Storage:
Mace can be stored in an airtight container away from moisture, heat, and sunlight. They will remain fresh and vibrantly flavored for about one year.
Uses:
Mace is a spice having a delicate, slightly sweet, but more delicate than nutmeg. The Mace spice that is widely used in cuisine around the world, including both Asian and Western recipes. It is used to flavor many kinds of Baked foods, Confections, Soups, meats, fish, Sausage, Sauces, Vegetables, and in preserving and pickling.
